In September 2025, Confisco Grille rolled out a new menu featuring a Grilled Angus Beef Churrasco Steak, vegan Summer Avocado Hummus, Curry Dosa, and a tres leches bread pudding.
In February 2025, Confisco Grille added new permanent menu items under Chef Antwan Dickerson, including a slow-cooked Quesabirria appetizer ($15.95), a Birria Burger ($20.95), and a Santa Fe Salad ($17.95-$21.95).
On January 23, 2020, Executive Chef Jason Glus debuted a globally-inspired menu overhaul at Confisco Grille adding dishes like a Pork Belly Banh-Mi, Chilled Tuna Noodle Bowl, and Grilled Lamb Meatballs while retaining classics such as the Confisco Burger.
Confisco Grille opened with Universal's Islands of Adventure on May 28, 1999, as an original full-service restaurant in Port of Entry — the first one guests encounter after entering — themed to an eclectic hodge-podge of goods 'confiscated' from travelers.
